With the lockdown defining a new sort of normal, I found myself experimenting or looking for frugal ideas. What did you find out or come up with? Some of mine:
"Snickers bars" (dates + peanut butter): I've been buying 800g boxes of dates (mine from Tesco). We started combining dates with crunchy peanut butter (I buy it by the Kg) as a quick sweet snack. We now refer to them as "snickers bars". You can get more creative and dust with cocoa powder and salt (for a "salted caramel" vibe).
Mayo-grilled toastie: Turns out mayonnaise works really well as a substitute for grilling those cheese sandwiches. I was very skeptical. Didn't think it could rival butter. I've shared with other skeptics. They're now converts.
Grilled cheese dates toastie: Who knew, dates would work well here also! Cheese and dates complement each other. Yeah, that 800G date box is no longer lasting as long as it used to.
Dried chili flakes: What now feels like forever ago, I bought a 1Kg bag of crushed chilli for £ 8 (Chinatown shop). The bag's been nothing but generous:
Chili powder: Put it in the blender and get a fine powder if you need that.
Hot sauce: Combine flakes, Apple cider vinegar (cheapest I found from Amazon), lime, water, and a pinch of salt. Keep in fridge (gets better after a day when flakes soak up). Play with ratios and other ingredients (go nuts). Don't think I'll buy hot sauces anymore. It's too easy to make your own (taste better too, IMO).
Spicy pickled fruit: Mauritians enjoy spicy delicious pickled fruit. My favorites are Mango and pineapple. Cut into pieces, add some vinegar (Apple cider is what I had), sprinkle chili flakes, and a pinch of salt. Keep in tupperware in the fridge. It's pretty much good to go after making.
Chipotle mayo: You can buy chipotle paste for £ 1.25. I got mine from Tesco. Can likely find cheaper. In any case, combine chipotle paste with mayo any time you'd like. Dip your fries if that's your thing (I do).
Yuca fries: Yuca fries are awesome. Yuca is such an underrated gem. You can buy a frozen 1Kg bag from Asda for £1.75. Boil for about 15-20 mins. You can eat boiled. Add salt + butter and it's pretty tasty as is. Cut into smaller pieces and grill with butter until brown. Bonus points if you dip the yuca fries in chipotle mayo.
Powder milk: Before lockdown, we were buying long-life milk in bulk (no fun carrying). Lockdown rightfully prevented bulk-buying milk, so we gave powder milk a try. We now mix some milk whenever needed and keep in fridge. For tea and coffee, it seems to do the job well enough (for us anyway).
Baking/rubber spatulas FTW: Get the very last out of those jars, blender, etc. using a baking spatula. No waste!

Online food shopping: Like many others. Online food shopping became the new norm for us. Tesco and Asda primarily, with occasional Amazon bulk buys (peanut butter, honey, cocoa powder). Every two weeks seem to be the sweet spot for us. We seem to do far less food impulse-buying.
Tuna and wraps (spice them up): Tuna and wraps are pretty versatile. We have them daily for lunch while working from home. Tuna and mayo does the job. It can get repetitive, but you can spice it up... Add curry powder, raisins, chili flakes, and maybe almond flakes (coronation tuna?). We make these tuna wraps often (heating the flour wraps up on the pan). On a similar note, quesadillas are a great snack. Dump cheese on a wrap, fold, heat both sides on a pan. Done.
Asda Brie: £0.99 and it's really really good (IMO).
Asda Oat cakes: We like oat cases. Cheapest we've found are £0.59 at Asda. Work great with the Asda Brie.
Rice bag: Found a Kohinoor Classic Basmati 10Kg rice bag for £14.00 at Tesco (was on sale). Been experimenting with rice a lot more. Jeera Rice (Indian Cumin Rice) is pretty awesome. There are more elaborate recipes, but just adding cumin seed (and optionally a clove) make things a little more interesting.
Split red lentils: Mainly, these cook pretty quickly (15-20 mins) and you can make a bunch of it to complement your rice. Can buy kilograms of it in just about any supermarket.
Spice bags (way cheaper): Skip the tiny spice packaging from shops (it's deceptively expensive). See if you can buy moderate bags of it (100g - 400g). Price per unit will be many times cheaper.

I made them from this recipe https://m.youtube.com/watch?v=UOyMdK7vNAo&t=175s so I thought I’d translate because they were soooo good. Slightly different texture than normal cookies because they don’t have flour, they’re chewy and very rich. Kind of reminds me of macarons. INGREDIENTS:
65 g of cocoa powder
140 g of soft brown sugar
1 tsp of baking soda
1 pinch of salt
100 ml of aquafaba
235 g of natural peanut butter
1 tsp vanilla essence
70 g of chopped dark chocolate
20 g chopped roasted peanuts or vegan white chocolate (I used the free from little white chocolate bar from tesco and it was really good)
METHOD:
In a large bowl mix the cocoa powder, brown sugar, baking soda and salt.
In another large bowl add the aquafaba, the peanut butter and the vanilla essence. Mix well until you get a paste.
Add this paste to the bowl with the dry ingredients and mix well. You may need your hands to mix better.
Add the chocolate and chopped peanuts or white chocolate and mix again
Make balls of the dough and flatten them as they will not spread.
Bake at 180ºC for 10 minutes.
I’m not GF or anything I just made them because they looked good but they’re actually slightly better for you as they’re quite high in protein and less high in carbs. The only problem I had was that a lot of oil leaked out so I cooled them on paper towels to drain the oil and it was fine.
